is there a way to manually sort the podcast programs by pinning them (other than renaming them in the alphabetic order I’d like them arranged and then sorting in alphabetic order)?
You can do something very similar to pinning. If you move all subscriptions (except the ones you want pinned) to a folder and then disable “show in main list” for them, the pinned ones stay on top of the list.
